Try our take on the classic Swedish summer’s dish – the toast skagen, usually packed with dairy and seafood, but now totally vegan and plant-based with the use of tofu and vegan seaweed caviar. It is luxorious, scrumptious and super easy!

ingredients
- 50 g firm tofu
- Zest from 1/2 citron
- Juice from 1 citron
- 2 cloves garlic
- 1dl cucumber (deseeded and chopped)
- 1tbsp chopped red onion
- 2 tbsp vegan caviar (e.g. seaweed caviar)
- 2dl vegan creme fraiche
- White pepper
- Salt
- 1 tbsp chopped dill (frozen or fresh)
instructions
Firstly, break up the tofu with your fingers. The pieces should be fairly small and irregular, like chopped up shrimp pieces. I found that it really makes all the difference doing this by hand rather than cutting with a knife.
Secondly, mix in the lemon zest and juice, squeze or grate in the garlic. Thereafter, season with salt and pepper and set aside for a few minutes to marinate.
While the tofu is marinating, deseed and chop up the cucumber into 1×1 cm or even smaller if possible. Mix this into the tofu when done chopping.
Thereafter, finely chop the onion and mix into the tofu/cucumber mix.
A few minutes should have passed by now, thus go ahead and mix in the vegan creme fraiche and vegan caviar into the tofu mix.
Finally, slice and mix in the dill into the now creamy lovely mix. Have a taste and correct the seasoning with salt, pepper or lemon if needed.
Finished and ready to be served! However, it will improve sitting in the fridge for a few hours or overnight! Delish!
