CHARRED BROCCOLI WITH GARLIC

ingredients
- 200-300 g fresh broccoli
- 2 cloves of garlic (finely sliced)
- Salt
- Black or white pepper
- Olive oil for frying
- Splash of water
instructions
- Pre-heat a pan on high heat.
- Slice the broccoli into rough but pretty boquets (either short or long), peel and slice the stalk into similar thickness.
- Put the broccoli into the pan ”dry”, without oil.
- Press down on the broccoli with a lid or a spatula for 10-15 seconds or until slightly charred.
- Salt and add oil to the broccoli and toss about in the pan for a minute, still on a high heat.
- Remove from heat and add garlic, stir a minute to distribute and cook the garlic slightly.
- Add a splash of water (a few tablespoons) and let the water quickly evaporate.
- Serve up these lean green umami-machines!
