CHARRED BROCCOLI WITH GARLIC

Green, smoky, crispy and full of flavour – these bad boys are really in their own league when it comes to eating yours greens! Charry flavourful broccoli can be dipped into hummus as a quick snack, served as a side or used a green vegan pizza topping.

ingredients

  • 200-300 g fresh broccoli
  • 2 cloves of garlic (finely sliced)
  • Salt
  • Black or white pepper
  • Olive oil for frying
  • Splash of water

instructions

  1. Pre-heat a pan on high heat.
  2. Slice the broccoli into rough but pretty boquets (either short or long), peel and slice the stalk into similar thickness.
  3. Put the broccoli into the pan ”dry”, without oil.
  4. Press down on the broccoli with a lid or a spatula for 10-15 seconds or until slightly charred.
  5. Salt and add oil to the broccoli and toss about in the pan for a minute, still on a high heat.
  6. Remove from heat and add garlic, stir a minute to distribute and cook the garlic slightly.
  7. Add a splash of water (a few tablespoons) and let the water quickly evaporate.
  8. Serve up these lean green umami-machines!
