HERBY ROASTED POTATOES

Lets get under skin of the humble potato. Packed full of energy, a master of soaking up flavours and cheap as the soil it grows in – potatoes are real vegan superheroes. Treat them with a bit of vinegar or lemon and they will be super-mega flavourful.

ingredients

  • 500 g potatoes
  • 2 tsp dried thyme, or 4 sprigs of fresh
  • Salt
  • Black or white pepper
  • 3 tbsp olive or rapeseed oil
  • 4 tbsp vinegar

instructions

  1. Pre-heat the oven to 210 C.
  2. Wash the potatoes and cut into wedges, keep the skin on – this is the most nutritious and tasty bit.
  3. Put the potato wedges into a baking tray or an over-proof dish.
  4. Season with thyme, salt, pepper, oil and vinegar and toss the potatoes with your hands or a big spoon.
  5. Pop the tray into the hot oven and bake until golden and delicous, usually takes about 35-40 minutes. I usually stir the potatoes a few times during the cooking to assure an even golden surface.
