Triple-layer chia pudding

Add some colour to your morning with this fun, fruity and delicious triple-layer chia pudding! Found in this colourful little jar is a fresh coconut/lime chia pudding in the bottom, coloured with superfood blue spirulina. The second layer is a nice cream made from bananas, strawberries and raspberries. At the top we have a fluffy mango/coconut cream. Add some crispy granola to the top and fruit in season. YUM!

ingredients

Bottom layer – nice cream

  • 1 Frozen banana
  • 0.5 dl Frozen strawberries
  • 0.5 dl Frozen raspberries

Middle layer – chia pudding

  • 2 dl plant-based mylk  (we used oat)
  • Zest and juice from 1/2 lime
  • 4 tbsp chia seeds
  • 1 tsp blue spirulina

Top layer – coconut cream

  • 1 dl coconut cream
  • 1 tsp vanilla powder
  • 1 dl frozen mango

Topping (optional)

  • seasonal fruits and/or berries
  • granola

instructions

To prepare the day before eating:

  1. Peel and chop the banana and put it in the freezer.
  2. Put all ingredients for the middle layer in a container. Whisk together with a fork until the chia seeds are fully incoporated with the fluid. Let set overnight in the fridge. 

Eating day

  1. Mix all ingredients for the bottom layer together in a food processoruntil it has a soft nice cream consistency. Put aside.
  2. Mix all ingredients for the top layer together in a blender until smooth and fluffy.
  3.  Now to the assembly, start with adding your bottom layer (nice cream) at the bottom of the serving dish (we used swing top jars).
  4. Thereafter add the middle layer (chia pudding) creating a separate layer from the bottom layer.
  5. Lastly, finish it off with the nice fluffy top layer full of mango and coconut goodness added on top as a separate layer. 

Top with seasonal fruits or berries and some crispy granola.
